Chorizo Rocket Tart with Roast Vegetables

An incredibly tasty Chorizo Rocket Tart Recipe with roasted vegetables which can be made as individual tarts or a a large quiche/tart. Perfect for a starter if made individually or as a main course with a good salad and some freshly dug new potatoes

Ingredients

  • 25 ml Olive Oil
  • 1 packet of shortcrust pastry
  • 100gm rocket (Arugula)
  • 1 red onion, sliced finely
  • 1 red pepper roasted and diced small
  • 1 * 200gm spicy chorizo, diced small
  • 100gm new potatoes, roasted until tender, sliced thickly
  • 2 eggs, 3 egg yolks
  • 120ml double cream
  • 120ml milk

Method

  • Add the olive oil to a frying pan (skillet) over a low heat
  • Add the Onions
  • Cook until soft and becoming translucent
  • Add the Chorizo and when the Chorizo has released its oil and crisped a little:
  • Add the roasted potatoes and peppers
  • Cook for a few more minutes until you have a delicious mixture of Chorizo Potatoes Onions and Peppers.
  • Make the tart.quiche base by lining a :28cm tart tin with shortcrust pastry. Try to ensure there are no breaks in the pastry. the egg mixture will find a way through and stick your tart to the case if you do not
  • Rest in a refrigerator for 45 minutes
  • Preheat the oven to 180°C
  • Line the pastry with baking paper and fill with rice, lentils, dried beans or peas or ceramic “baking beans” / “pie weights”
  • Bake for 10 minutes until the sides are solid and will not collapse without the beans
  • Remove the baking paper and beans/weights and  cook for another 10 minutes
  • Whisk the eggs, cream and milk together.
  • Add the Chorizo Potatoes Onions and Peppers. into the the tart case
  • Top with the Rocket
  • Pour over the Egg mixture
  • Push down the Rocket so that it is covered by the egg
  • Return to the oven at 180°C for approximately 30 minutes
  • The finished tart should have slight wobble to it when shaken. When removed from the oven and left to rest the egg will set and it will give a much lighter finish. It is especially beneficial if you want to serve the tart cold or gently reheated

This recipe can be adapted to make a lovely fritatta. just leave out the pastry and line the tart case with baking paper. Fill the tart case with the  the Chorizo Potatoes Onions and Peppers the top with the rocket and cover with the egg mixture and then cook as above
